I've seen varying shades of brown eggs. And I've obviously seen white eggs.
But, outside of Easter, not until Matt gave Mike and I some eggs from his chickens a few weeks ago had I seen eggs ranging so wildly from brown to blue to green.

Amy Zupanci, current employee of Niche but native of Edwardsville, IL, is planning to open a fine dining restaurant around Main Street in Edwardsville later this year.
