Not So Happy Meat

Let me just say I’m a realistic guy. I know that I eat meat like this in some of the restaurants I go to, and on occasion–though a lot less these days than before–I probably buy some of this meat for home consumption.
Also, I recognize that for the vast majority of Americans the cost of humanely raised meats is prohibitive, and Ellie and I are fortunate that our situation is such we can afford to make these choices.
So, if you can afford the expense of eating what I jokingly refer to as “happy meat” (thanks to an old coworker’s fiance), please do so. I think this is probably a lot more common than you’d like to think.
