Lamb Bacon, The Official Fat of stlbites.com

This morning, in the bacon section of my deep freeze, I found the remaining chunk of my Local Harvest Grocery lamb bacon. To be honest, I’d forgotten about it until Ellie suggested last week that we should do a bacon tasting for a Slow Food event someday. Discussions about the best local bacon briefly ensued, and I gave a nod to Local Harvest as having produced what are possibly my favorite, and the lamb bacon specifically.
Now I’d wager people love traditional bacon because people love minuscule chunks of crisp pork attached to much larger chunks of juicy, glistening pork fat. It is delicious, and some would argue it’s the best of fat followed by perhaps duck fat. I, however, have a tender place in my heart for lamb fat.
And so, when I saw lamb bacon with rosemary at Local Harvest a few months ago, it was a must have.
It doesn’t crisp up particularly and instead has a kind of chewy ham-like texture after rendering which I find strangely appealing. Take a bite and you’ll be greeted with the saltiness you’d expect of any bacon, followed by the richness of the succulent lamb fat, a dash of smoke and the permeating scent of rosemary that will linger in your kitchen for days. Put it in scrambled eggs and breakfast will reach new highs. Or hell, it’s cured so just slice it up and eat it straight.
It lived up to all expectations.
I’ve no idea if they still have it which makes this an utterly useless and outdated post, but be on the look out anyway, it’s not to be missed if it returns.

Who Wants a [local] Holiday Ham?

I told my mom in November I’d take care of the ham this Christmas as I really wanted to try one from a local farmer. But, as I’d been lolly-gagging around on this quest, and things were not looking good until last week when the Local Harvest email newsletter said they would be taking special orders for Patchwork Farms hams. The hams are $5.99/lb. and range from 6 – 10 pounds.
Patchwork Family Farms is composed of 15 independent family hog farmers who believe in raising pork the old-fashioned way using sustainable and humane growing standards. I can personally vouch for the quality of their bacon and pork loin as I had it at Sycamore in COMO, so I was damned pleased to actually pull through late in the game, and ordered one up without hesitation; thus avoiding the horrors of another Kretschmar Christmas.
I’ll be sure to let you know how it is, but mostly just wanted to say that if you’re interested in trying a local ham this Christmas, give Local Harvest a call before it’s too late, or purchase a ham directly from Patchwork Farms.

The Tower Grove Farmers’ Market will be closed for six months, but that doesn’t mean you have to give up eating local foods until then. There are several sources for local foods during the winter months, from monthly farmers’ markets to specialty stores. Here are a few:

Local Harvest Grocery, located at 3148 Morgan Ford Road, specializes in locally raised and produced foods. Many of the products at the Tower Grove Farmers’ Market and other area farmers’ markets can be found at the store plus hundreds of other local foods. In addition, the store also stocks a wide range of sustainably produced and organic dairy, grocery and baked goods and has a full service deli serving breakfast and lunch using local ingredients.The store sends out a weekly newsletter with specials and product news. The Maplewood Farmers’ Market Winter Pantry
Held once a month on a Saturday at the Schlafly Bottleworks in Maplewood at 7260 Southwest Avenue, this indoor market features a wide variety of local farmers and food producers.

- January 26, 9am – 1pm
- February 23, 9am – 1pm

St Louis Community Farmers’ Market
This market will be held the second Saturday of each month at St. John’s Episcopal Church at 3664 Arsenal St from 8:30am till Noon. This market will feature an assortment of local food producers and artisans.
Other Locations
Local foods are catching on and they are starting to show up in more and more stores and restaurants. Wherever you choose to shop and dine, we encourage you to choose local when possible. Making this choice helps the environment, our rural landscape and the local economy. It can also be healthier and it almost always tastes better.
